The aim of this guideline is to assist producers of wine covered under Category 13 of the Global Standard Food Safety (Issue 9). Category 13 covers alcoholic drinks and fermented/ brewed products.

 

For the purpose of this guideline, wine is defined as a product obtained from the alcoholic fermentation of grapes, whether crushed or not, or of grape must.  The guide does not offer specific guidance for products that fall under category 13 but are not wine according to the definition above but content may also be useful for products such as:

  • beer, cider, and other fermented products
  • liqueurs and spirits
  • alcoholic infusions
  • vinegar.

 

The guideline concentrates on the areas that are of particular concern to the wine industry. Wherever possible it includes practical guidance and examples to assist the effective implementation of requirements and promote consistency of interpretation. However, the examples are not exhaustive or exclusive and are provided solely to aid understanding of the principles behind the requirements.

This guideline is to aid individuals and companies involved in the certification process to ensure that robust systems and procedures are in place that adequately meet the requirements of the Standard.
