Mercedes is a Food Engineer from Uruguay with more than 20 years of experience in the food industry. She has worked as a technical manager, consultant, and auditor in food safety management systems.

She has been a Lead Auditor for Food Safety Schemes (BRCGS, FSSC 22000, ISO 22000, HACCP, and private schemes) since 2009, with over 300 audits performed across different certification programs.

Mercedes has also served as Technical Reference for food safety schemes within certification bodies and has delivered numerous training sessions for the food industry on various topics, both in person and online.

Her professional experience covers a wide range of food sectors, including meat, dairy, fruit, beverages, chocolate, and grain processing industries.
